Vodka popsicle Ingredients 1 cup unsalted butter (about 1.5 tablespoons) 2 tablespoons granulated sugar 2 1/2 cups water 1/4 cup vodka 1 1/8 cups sugar 2 large eggs, lightly beaten 1 1.4 teaspoons vanilla extract 1 teaspoon salt 1 teaspoon pepper 1/3 cup chopped mint, to taste 2 cups popcorn, toasted Directions Preheat oven to 350 degrees F. Line a baking sheet with foil.
Melt butter in a medium saucepan over medium heat.
Add sugar and whisk until dissolved.
Add water, whisking constantly, until smooth.
Add vodka and vanilla and mix until combined.
Bring to a boil, reduce heat and simmer for 20 minutes, stirring occasionally.
Remove from heat and stir in popcorn.
Place butter in another saucepan and add eggs and vanilla.
Whisk until combined and the mixture thickens slightly.
Pour into prepared baking sheet.
Bake for 8 minutes.
Remove and cool on a wire rack.
Popcorn should be ready to eat after 8 minutes or so.
